Yeast and yeast products are GRAS under 21 CFR 184.1983 (baker's yeast extract) and 21 CFR 172.325-172.330 (related forms). Yeast is a source of B vitamins and protein.
What it is
Dried yeast (Saccharomyces cerevisiae) in powdered form; can be active dry yeast, instant yeast, inactive nutritional yeast, or yeast extract.
Leavening (active forms), flavoring/umami source (inactive forms), nutrient source.
Why it's flagged
- tyramine content in yeast extract relevant for those on MAOIs
- possible bloating in sensitive individuals
