What it is

Flour milled from hard wheat varieties (high-protein, high-gluten Triticum aestivum cultivars typical of bread wheats) that has not been treated with chemical bleaching agents such as benzoyl peroxide or chlorine; whitens only by natural air-aging.

Provides the gluten-forming protein structure for breads, pizza, and other yeast-leavened doughs. Higher protein than soft wheat flour, giving stronger doughs and chewier crumb.
