Truffle Flavouring
Most commercial 'truffle flavouring' contains synthetic 2,4-dithiapentane rather than authentic truffle extract. The aroma chemicals used are approved flavorings under FDA and EFSA regulations and are considered safe at typical use levels.
What it is
A flavoring designed to impart truffle aroma; commonly contains 2,4-dithiapentane (bis(methylthio)methane), a synthetic aroma chemical, often in oil.
Flavoring agent providing earthy, mushroomy, truffle-like aroma.
What regulators actually say
"Synthetic flavoring substances and adjuvants may be safely used in food."
"Only flavouring substances included in the Union list... are authorised for placing on the market."
