Textured wheat protein is concentrated wheat gluten – high in protein but contains gluten and is unsafe for individuals with celiac disease or wheat allergy. As a whole-protein ingredient, it has no specific additive concerns.

Wheat gluten extruded into a fibrous, meat-like texture; also known as seitan when hydrated.
