Generic 'sulfates' as a label is ambiguous. Common food sulfates (calcium, magnesium) are GRAS with no significant safety concerns.
What it is
Sulfates are inorganic salts containing the sulfate (SO4^2-) anion; in food contexts, they refer mainly to calcium sulfate, magnesium sulfate, and similar mineral salts.
Firming agents, dough conditioners, mineral fortification, and tofu coagulants.
