Stearoyl Lactylic Acid
Sodium stearoyl lactylate (the dominant commercial salt) is permitted under 21 CFR 172.846; calcium stearoyl-2-lactylate under 21 CFR 172.844. JECFA and EFSA share a group ADI of 20 mg/kg bw/day for E481 and E482.
What it is
Stearoyl lactylic acid is the free-acid form of the lactylate emulsifier family; commercial forms are sodium (E481) or calcium (E482) salts.
