What it is
A family of preservatives (sorbic acid and its potassium, sodium, or calcium salts) derived from sorbic acid, originally identified in rowan berries.
Inhibits growth of yeasts, molds, and some bacteria, extending shelf life.
Why it's flagged
- Rare contact or pseudo-allergic skin reactions
- Some studies suggest in-vitro genotoxicity of reaction products with nitrites — relevance to typical diet is unclear
