Sodium and Calcium Caseinates
Sodium and calcium caseinates are GRAS milk-derived proteins permitted by FDA as direct human food ingredients (21 CFR 184.1751 sodium caseinate is GRAS; calcium caseinate has long-standing food use). They are dairy proteins, so they trigger milk allergy and are not suitable for milk-allergic individuals.
What it is
A blend of milk-protein salts produced by treating casein (the major protein of cow's milk) with sodium hydroxide and calcium hydroxide to form sodium caseinate and calcium caseinate, then drying the mixture to a fine, water-dispersible powder.
Emulsifier, protein fortifier, water/fat binder, foam stabilizer, and whitening agent. Disperses fat in water-continuous systems and stabilizes texture in coffee whiteners, processed meats, sauces, and protein-fortified foods.
Why it's flagged
- contains milk protein — must be declared as a milk allergen under FALCPA
- not suitable for people with cow's-milk allergy
- contributes sodium when sodium caseinate is the dominant form
