Sea Salt
FDA recognizes salt as GRAS with no limitation on use. Excess sodium intake (Americans average >3,300 mg/day vs <2,300 mg recommended) is linked to high blood pressure and cardiovascular disease, but per-product flagging adds little value beyond sodium-based scoring.
What it is
Sodium chloride (NaCl) obtained by evaporating seawater. Chemically identical to mined/refined salt, with trace minerals depending on source.
Flavor enhancer, preservative, texture/dough conditioner, microbial growth inhibitor.
Why it's flagged
- Excess sodium raises blood pressure and stroke/heart disease risk at population scale
- Most Americans exceed the 2,300 mg/day limit
What regulators actually say
"The Commissioner regards such common food ingredients as salt, pepper, vinegar, baking powder, and monosodium glutamate as safe for their intended use."
"Most Americans eat too much sodium which can increase blood pressure and your risk for heart disease and stroke."
Regulatory status
United States — FDA
GRAS (21 CFR 182.1)
European Union — EFSA
permitted; WHO recommends <2 g sodium/day
