Raw Tuna
Raw tuna is a major fish allergen and a known source of methylmercury. FDA and EPA jointly advise pregnant women, women of childbearing age, and young children to limit certain tuna species due to mercury content.
What it is
Uncooked tuna fish flesh (multiple species including Thunnus albacares, T. obesus, T. thynnus).
Animal protein; key ingredient in sushi, sashimi, ceviche, tartare.
Why it's flagged
- mercury (methylmercury)
- parasites (Anisakis)
- histamine/scombroid poisoning if mishandled
- fish allergen
What regulators actually say
"Tuna, bigeye is in the 'Choices to Avoid' category due to its higher mercury content."
"Fish to be served raw or undercooked must be frozen ... to destroy parasites."
