Potato Maltodextrin
Maltodextrin is rapidly digested to glucose with a high glycemic index, similar to sugar in metabolic effect. It is GRAS but should be considered when assessing glycemic load; some research suggests it may alter gut microbiota at high intakes.
What it is
Maltodextrin produced by partial hydrolysis of potato starch — a polysaccharide of glucose units (DE 3-20).
Bulking agent, carrier, texture modifier, mild sweetener.
Why it's flagged
- High glycemic index
- Hidden carb load in 'sugar-free' products
What regulators actually say
"Maltodextrin is a non-sweet nutritive saccharide polymer... GRAS for use in food in accordance with good manufacturing practice."
"Dietary maltodextrin can shape gut microbial composition and may have implications for intestinal health."
