Pectinase is a processing aid generally not present in the final product in significant amounts. It is GRAS when produced from approved source organisms and poses no known consumer health concern at exposures encountered in food.
What it is
An enzyme (or enzyme complex) that breaks down pectin in plant cell walls, typically produced from Aspergillus niger or similar food-grade microorganisms.
Processing aid used to clarify juices, increase yield during pressing, and reduce viscosity in fruit and vegetable products.
