Nucleotides are naturally occurring molecules. Disodium 5'-inosinate (E631) and disodium 5'-guanylate (E627) are commonly used flavor enhancers — they often contain sodium and may not be suitable for individuals on low-purine diets (gout) or low-sodium diets.
