What it is
Nitrate salts (typically sodium nitrate or potassium nitrate) used as curing agents in processed and cured meats; also occur naturally in vegetables.
Curing agent; preserves color, inhibits Clostridium botulinum, and contributes to characteristic cured-meat flavor.
