Natural maple extract is a flavoring complex with the characteristic vanillin-, hazelnut- and spicy-aroma compounds found in maple syrup. Toxicology studies on maple-syrup-derived extracts have not shown overt toxicity at doses up to 1000 mg/kg/day in rats.
