Monoglycerides Lactate
Lactic acid esters of mono- and diglycerides are GRAS in the US and authorized in the EU as E472b. EFSA's 2017 re-evaluation concluded no safety concern at reported use levels and that an ADI 'not specified' was appropriate.
What it is
Lactate esters of mono- and diglycerides (E472b) are emulsifiers made by esterifying glycerol fatty acid mono/diglycerides with lactic acid.
Emulsifier, dough conditioner, aerating agent.
