Mono- and diglycerides (E471) are FDA GRAS under 21 CFR 184.1505 and EFSA-authorized. EFSA's 2017 re-evaluation found no safety concerns and no need for a numerical ADI.
What it is
Mono- and diglycerides of fatty acids (E471), emulsifiers derived from glycerol and fatty acids of plant or animal origin.
Emulsifier, stabilizer, anti-staling agent.
Why it's flagged
- May contribute trans fat when made by glycerolysis of partially hydrogenated oils
- Process contaminants 3-MCPD and glycidyl esters flagged by EFSA

"Mono- and diglycerides... are generally recognized as safe (GRAS) when used in food in accordance with current good manufacturing practice."
"If E 471 is manufactured by glycerolysis (transesterification process) of hydrogenated fats and/or oils, this may increase the amounts of trans fatty acids in the final products."
