Light rye flour retains some rye character but has less fiber and fewer micronutrients than whole rye flour. It is a refined grain product and behaves nutritionally more like white flour.

What it is

Rye flour from which most of the bran and germ have been removed by sifting, leaving a lighter-coloured, finer flour mainly from the endosperm.

Provides mild rye flavor and lighter crumb than whole rye flour in baked goods.
