Beta-galactosidase enzyme that hydrolyzes lactose into glucose and galactose, produced from microbial sources (e.g., Aspergillus oryzae, Kluyveromyces lactis).
Processing aid / food enzyme to produce lactose-free or low-lactose dairy.
