Hydrolyzed oyster extract is derived from a major shellfish allergen (mollusk/crustacean labelling required in EU; mollusks are a major allergen in EU but not on the FDA's nine major allergens list, though shellfish are). FDA requires shellfish labelling for crustaceans.

Oyster (Ostrea / Crassostrea) tissue broken down by enzymatic or acid hydrolysis to yield a peptide- and mineral-rich extract.
Used as a flavor enhancer (provides umami/seafood character), source of zinc and amino acids in supplements; also used in cosmetics.
