Horseradish Flavouring
Horseradish flavoring may consist of natural horseradish extract or synthetic allyl isothiocyanate (AITC). AITC is a strong sensory irritant; as a flavor it is used at levels well below irritant thresholds.
What it is
Flavoring derived from horseradish root (Armoracia rusticana) or synthetic equivalents (e.g., allyl isothiocyanate).
Provides pungent, sharp horseradish flavor in sauces, condiments and snacks.
Why it's flagged
- Allyl isothiocyanate is a sensory irritant at high doses
- May contain undisclosed flavor components
