High Maltose Corn Syrup
Caloric sweetener. Like other corn syrups, provides simple sugars and contributes to total added sugar intake.
What it is
Corn syrup that has been treated with enzymes to convert a higher proportion of glucose to maltose, typically containing 50% or more maltose. Sweetness is lower than HFCS or regular corn syrup.
Sweetener, fermentation substrate (especially in brewing), texture modifier; provides mild sweetness, low hygroscopicity, and good fermentation profile.
