Gelling Agent

Generic 'gelling agent' is an umbrella class with members ranging from low-concern (pectin, gelatin) to additives with EFSA reviews flagging digestive concerns (carrageenan in some studies). Without specific identification, consumer assessment of allergen, vegan, and additive status is impossible.
What it is
