Fractionated Palm Kernel Oil
Fractionated palm kernel oil is generally recognized as safe and is widely used as a trans-fat-free alternative to hydrogenated oils. However, it is very high in saturated fat (largely lauric and myristic acid), which the FDA and other health authorities recommend limiting because high saturated fat intake is associated with increased LDL cholesterol and cardiovascular disease risk.
What it is
Vegetable oil derived from palm kernels that has been mechanically fractionated (separated by melting point) to isolate specific triglyceride fractions, typically yielding a high-saturated-fat, solid-at-room-temperature fat.
Provides texture, mouthfeel, and stability in confections and coatings; replaces partially hydrogenated oils as a non-trans-fat hard fat.
