Firming Agent
Generic 'firming agent' is an umbrella term that does not identify which specific compound was used; most are calcium-based salts that are GRAS at typical use levels. Without specific identification, consumers cannot assess sodium contribution or any individual additive concerns.
What it is
Functional class of additives that maintain or restore tissue firmness in fruits and vegetables (e.g., calcium chloride, calcium lactate, calcium citrate).
Preserves crispness/firmness in canned, frozen, or processed produce.
What regulators actually say
"Calcium chloride is the chemical CaCl2... The ingredient is used as an anticaking agent... a firming agent... a flavor enhancer... a humectant... a nutrient supplement... a pH control agent... a stabilizer and thickener."
Regulatory status
United States — FDA
Specific firming agents (e.g., calcium chloride 21 CFR 184.1193) are GRAS; functional class alone is non-specific
European Union — EFSA
Functional class plus specific E number required under EC 1333/2008
