Evaporated Milk
Evaporated milk is concentrated cow's milk and a major food allergen. It has higher concentration of saturated fat, sugar (lactose), and minerals than fresh milk per unit volume.
What it is
Cow's milk that has had about 60% of its water removed by evaporation, then sterilized by canning. Standard of identity at 21 CFR 131.130.
Concentrated dairy ingredient with a longer shelf life than fresh milk.

"Evaporated milk is the liquid food obtained by partial removal of water only from milk... It contains not less than 6.5 percent by weight of milkfat, not less than 16.5 percent by weight of milk solids not fat, and not less than 23 percent by weight of total milk solids."
