Thaumatin
Also known as: E957
EFSA's 2021 re-evaluation of thaumatin (E957) found no safety concern at the regulatory maximum-level exposure with a margin of safety >5,000, and concluded that no numerical ADI is needed. FDA recognizes thaumatin as a GRAS flavor modifier.
What it is
Thaumatin: a sweet-tasting plant protein from Thaumatococcus daniellii arils, ~2,000–3,000× sweeter than sucrose.
