Potassium Iodate
Also known as: E917
Potassium iodate is GRAS in the US for bread manufacture up to 0.0075% of flour weight, but is NOT on the EU Union list of approved food additives, and JECFA concluded it should not be used as a flour treatment agent because adding a potent iodine source to a staple food could push iodine intake too high.

Inorganic iodine compound (KIO3) used as an oxidizing flour treatment agent and dough conditioner; also used in salt iodization.
