Disodium 5'-Ribonucleotide

Disodium 5'-ribonucleotides (E635) are FDA-permitted flavor enhancers (21 CFR 172.535/172.530 for the components). EFSA's 2021 re-evaluation found no safety concerns at current use levels and established a group ADI of 0–4.5 mg/kg bw/day expressed as ribonucleotide 5'-monophosphates.
What it is
Disodium 5'-ribonucleotides — a 50:50 mixture of disodium inosinate (E631) and disodium guanylate (E627), used as flavor enhancers.
Flavor enhancer (umami, synergistic with MSG).
