Gluconic acid is a naturally occurring metabolite found in fruits, honey, and wine. EFSA re-evaluated it and concluded there is no safety concern at typical food use levels.
What it is
Gluconic acid (E574) is a mild organic acid produced by oxidation of glucose, often by Aspergillus niger fermentation.
Acidity regulator, sequestrant, and chelating agent.

- very high doses can cause GI upset
