Calcium oxide is FDA-affirmed GRAS under 21 CFR 184.1210 and used in food with no limitation other than current good manufacturing practice. In food applications it reacts with water to form calcium hydroxide.
What it is
Calcium oxide (CaO; CAS 1305-78-8), also known as quicklime, burnt lime, or calx; produced by calcining limestone or oyster shells.
Used as a dough conditioner, yeast food, pH control agent, nutrient supplement (calcium fortification), and processing aid.
