Ammonium Sulphate

EFSA's 2019 re-evaluation concluded that exposure to ammonium sulphate (E 517) does not raise a safety concern at reported uses and use levels and that no numerical ADI is needed. FDA permits it as a GRAS dough conditioner.
What it is
Ammonium sulfate ((NH4)2SO4), an inorganic salt used as a flour treatment agent and yeast nutrient.
Yeast food / dough conditioner and acidity regulator; supplies nitrogen and sulfate to yeast in fermentation.
