Sorbitan Tristearate

Sorbitan tristearate is approved by FDA for specific food uses. EFSA's 2017 re-evaluation set a group ADI of 26 mg/kg bw/day (revised from 25) for sorbitan esters and concluded there is no safety concern at reported use levels in the EU.
What it is
Sorbitan tristearate — a non-ionic emulsifier made from sorbitol and stearic acid.
Emulsifier and crystallization modifier; prevents fat bloom in chocolate.
