What it is
Esters of mono- and diglycerides of fatty acids (E472a-f), a family of synthetic emulsifiers including acetic, lactic, citric, tartaric, mono/diacetyltartaric, and mixed esters.
Emulsifier, dough conditioner and stabilizer in baked goods, margarines, and processed foods.
