Metatartaric Acid
Also known as: E353
EFSA re-evaluated metatartaric acid (E 353) in 2020 and concluded there is no safety concern at reported uses and use levels, including it in the group ADI of 240 mg/kg bw/day for L(+)-tartaric acid/tartrates. It is authorized in the EU at a maximum permitted level of 100 mg/kg in wine.

Metatartaric acid (E 353), a partially polymerized form of L(+)-tartaric acid.
Stabilizer to prevent precipitation of tartrate crystals, primarily in wine.
