Potassium sodium tartrate is a long-established food additive with a wide safety margin. Tartrates are not significantly absorbed at use levels and are largely excreted.
What it is
Potassium sodium tartrate (Rochelle salt), the double salt of tartaric acid with potassium and sodium.
Acidity regulator, sequestrant, emulsifier (especially for cheese products).
