EFSA's 2020 re-evaluation established a group ADI of 240 mg/kg bw per day for L(+)-tartaric acid and tartrates and concluded current uses are within safe limits. FDA lists it as GRAS.
What it is
L(+)-Tartaric Acid — a naturally occurring dicarboxylic acid found abundantly in grapes; used as a food additive.
Acidulant, flavor enhancer, sequestrant, leavening synergist.
