Potassium Citrates
Also known as: E332
Potassium citrate is GRAS in the US and authorized in the EU as E332 with an ADI 'not specified' due to low toxicity. It is a common alternative to sodium-based buffers and is also used therapeutically for kidney stone prevention.
What it is
Potassium citrates (E332): includes monopotassium citrate (E332i) and tripotassium citrate (E332ii); potassium salts of citric acid.
PH buffer, acidity regulator, sequestrant, emulsifying salt.
What regulators actually say
"Potassium citrate is generally recognized as safe (GRAS) when used as a buffer, sequestrant, or pH control agent in food."
"EFSA Panel re-evaluated citrates E 330–E 333 and concluded an ADI 'not specified' is appropriate."
Regulatory status
United States — FDA
GRAS per 21 CFR 184.1625 (potassium citrate).
