Ascorbic Acid

Ascorbic acid is GRAS in the US and approved as E300 in the EU. It is essential for human nutrition with very high tolerance; the only concerns are very high supplemental doses (gastrointestinal upset, kidney stone risk in predisposed individuals).

L-Ascorbic acid (vitamin C), a water-soluble vitamin and reducing agent.
Antioxidant, dough conditioner, and nutrient fortificant; prevents oxidative browning and rancidity.

- very-high-dose supplementation associated with GI distress and kidney stones in predisposed individuals
