Potassium Bisulphite

Sulphites including E228 are recognized as a major allergen and can trigger asthma attacks and severe reactions in sensitive individuals, especially asthmatics. Regulated and labeled accordingly worldwide.
What it is
Potassium bisulphite (potassium hydrogen sulphite, KHSO3), an inorganic sulphite salt.
Preservative and antioxidant; releases sulphur dioxide to inhibit microbial growth and prevent oxidation/browning.

United States — FDA
Sulphiting agents permitted in foods other than fresh fruits/vegetables; FDA banned use on fresh fruits and vegetables intended to be served raw in 1986. Required to be labeled when present at ≥10 ppm (21 CFR 101.100).
European Union — EFSA
Authorized in the EU as E228 with group ADI of 0.7 mg SO2 equivalents/kg bw/day; mandatory allergen labeling under Regulation 1169/2011.
