Acetylated Starch
Also known as: E1420, E1421, mono starch acetate, Starch acetate esterified with vinyl acetate
EFSA re-evaluated modified starches including E1420 in 2017 and concluded there is no safety concern at the reported uses and use levels for the general population, including infants over 12 weeks of age. JECFA assigns ADI 'not specified' (no toxicity at any level tested).
What it is
Acetylated starch — a modified starch where some hydroxyl groups have been esterified with acetic anhydride or vinyl acetate.
Thickener, stabilizer, and texturizer; improves freeze-thaw stability and reduces retrogradation.
