Acid-Treated Modified Starch
Also known as: E1401
Acid-modified starch is FDA-approved under 21 CFR 172.892 for use in food and is considered safe; the modification process produces a digestible starch with reduced viscosity. EFSA's 2017 reevaluation of modified starches as a group concluded there is no safety concern at reported use levels.
What it is
Acid-treated modified starch — food starch chemically thinned by treatment with hydrochloric or sulfuric acid.
Thickener, binder, gelling agent in confectionery and dairy.
