What it is

Pullulan; a water-soluble polysaccharide produced by fermentation of starch by the yeast-like fungus Aureobasidium pullulans, consisting of α-1,4 and α-1,6 linked maltotriose units.

Film former, glazing/coating agent, capsule former for dietary supplements (vegetarian alternative to gelatin), thickener.
