Dehydrated Potato Flakes
Dehydrated potato flakes are essentially processed whole potato. They are nutritionally similar to fresh potato (carbohydrates, potassium, vitamin C - though some C is lost in processing).
What it is
Dried potato product made by cooking, mashing, and drum-drying potatoes into flakes. May contain small amounts of mono- and diglycerides and sodium acid pyrophosphate to control color.
Reconstitutable potato product or thickener/binder/filler in soups, baked goods, and snack foods.
Why it's flagged
- may contain antioxidant additives (BHA/BHT or sulfites) for shelf stability
