Degermination produces a shelf-stable, finer-textured product but removes most of the fiber, fat, and vitamins found in whole corn. It is often enriched with B vitamins and iron in the US.
What it is
Yellow corn ground into meal after the germ and bran have been removed, leaving primarily the starchy endosperm.
Provides texture and structure in baked goods, snacks, breakfast cereals, and breading.
