Cultured Celery Extract
Although marketed as natural, cultured celery extract delivers nitrite that has the same chemistry as added sodium nitrite, including formation of N-nitroso compounds in cured meats. Processed meats containing nitrites are classified as Group 1 carcinogens by IARC.

Celery juice extract fermented with bacterial cultures (e.g., Staphylococcus carnosus) to convert nitrate naturally present in celery into nitrite; used as a 'natural' curing agent in processed meats.
