Cocoa Paste Processed With Alkali
Also known as: alkalized cocoa paste
Alkalized (Dutched) cocoa is a standard cocoa product permitted under FDA standards of identity and EU rules. Alkalization reduces flavanol content but is not associated with health concerns at normal dietary levels.
What it is
Cocoa liquor (ground cocoa nibs) treated with an alkalizing agent (Dutch processing) to neutralize natural acidity.
Provides chocolate flavor, color and mouthfeel in chocolate, baked goods and beverages with milder, less acidic notes than natural cocoa.
