Clarified Butter
Clarified butter is essentially milkfat — about 99-100% fat, nearly all saturated. The American Heart Association recommends limiting saturated fat to under 6% of daily calories due to LDL-cholesterol-raising effects.

Butter from which milk solids and water have been removed, leaving nearly pure butterfat (also known as ghee in clarified form).
Cooking fat with high smoke point; provides buttery flavor without milk solids burning.
