Citral
Citral is GRAS as a synthetic flavoring under 21 CFR 182.60 and is on the EU Union list of flavoring substances. EFSA's flavoring evaluation found no safety concern at use levels.
What it is
A natural aromatic aldehyde (mixture of geranial and neral) found in citrus oils and lemongrass; also produced synthetically.
Flavoring substance; provides lemon scent.
