Calcium Propionate
Calcium propionate is FDA GRAS under 21 CFR 184.1221 and authorized in the EU as E282. EFSA's 2014 re-evaluation did not allocate a numerical ADI; JECFA's ADI is "not limited." Propionic acid occurs naturally in fermented foods.
What it is
Calcium propionate, the calcium salt of propionic acid, used as a preservative against mold and certain bacteria.
Preservative (antimould), particularly in baked goods.
Why it's flagged
- Anecdotal reports of behavioral effects in some sensitive children (not confirmed by regulators)
- Some studies suggest possible insulin/metabolic effects at high doses
